The Journey

Matariki Challenge – Tino Reka Te Kai

Our dish represents the journey of the Maori people from Asia through Indonesia and the Islands and onto Aotearoa.
The star of our dish is locally sourced urenika potato which repesents the importance of the seasonal harvest to the Maori people.

Sources
Fish – fresh from the sea.
Urenika potato – Rukuhia (Waikato).
Tomatoes – Ohaupo (Waikato).
Pikopiko – Kaimai, Mamaku & Rotorua.
Citrus – Bay of Plenty.

Like the Maori fishermen who relied on the bounty of the sea, the chefs catch can vary. Snapper may be substituted if unavailable due to seasonal changes. Your wait staff will inform you of any such change.
